Chocolate Coffee Mousse Ingredients • 120ml chilled heavy cream • 4 egg yolks • 50ml strong Arabic Coffee, strained or espresso • 150g sugar • Pinch salt • 175g semisweet chocolate (60-72% cacao), chopped finely • 2 egg whites Method 1. Whip heavy cream to stiff peaks, cover and chill. 2. Combine egg yolk, coffee, salt and 30g sugar in metal mixing bowl and place over pot of simmering water. 3. Whisk mixture in the mixing bowl constantly over the simmering water until fluffy and pale in colour and the temperature reaches 70C. 4. Remove bowl from heat add chopped chocolate and whisk until melted thoroughly and smooth. Allow mixture to cool to room temperature. 5. Beat egg whites in standing mixer while gradually adding remaining sugar. Whip until firm peaks are formed. 6. Fold egg whites gently into cooled chocolate mixture. 7. Fold whipped cream gently into the mixture. 8. Divide mousse into serving dishes, cover and chill. 9. Garnish with crumbled chocolate cookie crumbles.
